Apple Brownies



I saw the name of this recipe and was halfway to the kitchen before finishing reading. And I’m happy to report these bars are just as good as they sound. It’s like someone squished an apple pie into bar form, but gave it a cookie texture just for kicks. Awesome kicks.

These are surprisingly simple to make; the hardest part was peeling the apples. I definitely plan on including this recipe in my repertoire of apple recipes for the fall. I try to take at least one trip to a nearby orchard to pick apples and I always come back with at least 10 pounds. While I have no problem eating apples plain (in fact, I eat one every afternoon as a snack) after a while you want something new. And pie can sometimes be a pain – so many steps!

But these are a great compromise – same apple and cinnamon taste, half the effort. Enjoy!





Apple Brownies

I made these on a Sunday and they were still devoured on a Monday evening. Just make sure you store them in an airtight container. I didn’t have walnuts on hand and as such didn’t add them, but I’m sure they make a delicious addition. Similarly, I used whole-wheat flour and thought they tasted great, so feel free to experiment.

Ingredients
1/2 cup (1 stick) unsalted butter, melted
1/4 cup brown sugar
1/2 cup white sugar
1 egg
1/2 teaspoon vanilla
1 1/2 cups apples (about 1-2 apples), peeled, cored and chopped
1/4 cup chopped walnut
1 cups flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Equipment
Mixing bowl, 8x8 pan

Preheat oven to 350. In large bowl, beat butter, sugar, eggs and vanilla. Stir in apples and nuts. In a separate bowl, sift together flour, baking soda, baking powder, salt, and cinnamon. Add dry ingredients to wet and mix. Fold into apple mixture.

Pour batter into a greased 8 x 8 inch pan. Bake for 45-50 minutes or until toothpick inserted comes out clean with a few crumbs attached. The top will have subtle cracks. Let it cool before you cut into bars.

Makes 10-12 bars
